If I had sex without ejaculation and now stop taking birth control pills before the test, can I be pregnant?

Good morning. I have been taking Liberelle contraceptive pills for 3 months. Unfortunately, I have to stop doing it by doing a few tests for pcos. On September 30, I had unprotected sex with my boyfriend without. Tomorrow (05.10) I finish the pack of pills. Is there a risk of getting pregnant if I didn't miss any pills and took them at the same time? Will I still be protected during the 7 day break?

In the situation you describe, there is no risk of pregnancy.
You are also protected during the 7 days for withdrawal bleeding. After 7 days from taking the last active tablet, the protection will be reduced and additional protection should be used. I'm attaching a link to a helpful post:
